Among the signature salads, the MIXT Caesar is the lightest at 475 cal (16g protein). If you build your own, greens are 15–30 cal and grilled chicken is 120 cal for 28g protein — a chicken salad over greens with a splash of balsamic vinegar (30 cal) lands around 200 cal for nearly 30g protein, the leanest high-protein option on the menu.
The Elote and Orchard both hit 51g protein, and the MIXT Cobb is close at 49g with only 11g carbs. Grilled chicken (28g protein / 120 cal) and grilled steak (25g / 160 cal) are the most protein-dense adds; crispy chicken also has 28g protein but costs 330 cal and 19g fat for the breading.
Same protein, very different calories: grilled chicken is 120 cal / 28g protein / 0g fat, while crispy chicken is 330 cal / 28g protein / 19g fat. Choosing grilled saves about 210 calories for the identical protein — the single biggest calorie lever on most builds.
A lot, and it's easy to miss. Extra virgin olive oil is 270 cal and the creamy dressings (caesar 180, blue cheese 140, tamari ginger 160) sit at 140–180 cal. The lightest options are salsa verde and MIXT fire sauce (15 cal), lime crema (80), and balsamic vinegar (30). Ordering dressing on the side and using half is the simplest cut.
The warm bowls are bigger meals: they run 805–1015 cal because the cilantro-lime brown rice or quinoa base alone is 190–355 cal and 33–62g carbs. Bachan's Bowl tops out at 1,015 cal / 107g carbs. The salads range from 475 to 935 cal. For a lower-carb warm bowl, the quinoa base saves roughly 130 cal versus brown rice.
Skip the warm grains, dried fruit, and croutons and lean on greens, protein, cheese, egg, and avocado. The MIXT Cobb is the lowest-carb signature salad at 11g carbs (49g protein), and a build-your-own over greens with grilled chicken, egg, avocado, and a vinegar-based dressing stays well under 20g carbs.
Marinated organic tofu is the plant-based protein at 180 cal / 13g protein, and crispy cauliflower (230 cal) is a vegetarian pick at select locations. Nearly every base, vegetable, fruit, nut, and legume is plant-based — edamame (50 cal / 5g protein) and lentils (90 cal / 6g) add protein. Look for dressings marked (v, df) like champagne, lemon tahini, and maple bbq; caesar and the crema-based dressings are not vegan.
The composed bowls and salads climb fast: Bachan's Bowl is about 2,195 mg and Valkyries 2.0 around 2,025 mg. Cheeses (cotija 430 mg, blue cheese 260 mg), olives (210 mg), walnut dukkah (1,070 mg), and the sauces drive most of it. Building over greens with a vinegar dressing and going easy on cheese and cured toppings keeps sodium down.
